Where to stay in Cyprus

Hi my sister and I would like a holiday in Cyprus. We are two divorced 50 odd year olds who like self catering, love restaurant eating out and visiting bars. Whilst we don't want to go "clubbing" we would like a bit of life. Love the sea but want a pool, bit of relaxation and few historic places to visit of and of course a bit of shopping. Where would you recommend please.
